As eggs age, the egg shrinks and a pocket or air forms at the bottom of the egg. To check how fresh your eggs are place the eggs in a big bowl of water. The ones that turn bottom end up in the water are not fresh and are nearing or are off. The ones that float are definitely not good to eat. They are past their use by time. Another way to test the egg is to crack it in a bowl. A fresh egg will stand up high and the egg white will be separated into two sections and firm. As an egg gets older it flatten in the bowl and spreads and the egg white gets very thin and liquidy.

It is always best to buy farm fresh eggs. Sometimes supermarket farm fresh eggs come from battery hens in cage so it is best to be careful what you are buying. Caged hen eggs are quite often disguised as FREE RANGE eggs. Farmers can label their eggs free range if they are caged in big cages where they can walk aorund.
as you can see these eggs came from two different places. The eggs at the bottom of the picture came straight froma farm. The one a tthe top came from the supermarket. The colour in the one at the top is not natural and is possibly from a food additive in their diet to give a brighter colour to the yolks. Eggshells are porous and can be contaminated by other things stored around them. Onions stored with eggs will make the egg smell like onions. Chemicals can penetrate eggshells. It is best to keep your eggs in a chemical free enivronment and natural packaging. Always store eggs the pointy side up. Always store eggs in the refrigerator
